Olive oil quality is classified based on a specific methodology and international standards set by the regulations implemented by the International Olive Oil Council.<\/p>\n<p>According to Regulation 865\/2004(EC) (29-04-2004), Annex I, Virgin Olive Oils are classified as the olive tree solely by mechanical or other physical means under conditions that do not lead to alterations in the oil, which have not undergone any treatment other than washing, decantation, centrifugation or filtration, to the exclusion of oils obtained using solvents or using adjuvants having a chemical or biochemical effect, or by re-esterification process and any mixture with oils of other kinds.<\/p>\n<p>Virgin olive oils are classified and described in detail as The quality of olive oil may be significantly degraded, even during the growth of the olive, because of its contact with parasites, microorganisms, humidity, oxygen, intense light, temperature, and it is determined through organoleptic evaluation (panel test) and measurement of certain physico-chemical parameters, such as acidity, peroxide value, absorbance coefficients K270\/K232\/delta-K, etc.<\/p>\n<p>The remaining check parameters are determined in order to collect information related to the authenticity of olive oil, i.e. to detect the presence of any seed oils or other impurities (stigmastadiene, delta-ECN 42, waxes, saturated fatty acids in position 2, sterols, sterols&amp;#39; composition, etc.).<\/p>\n<p>In brief, the quality characteristics of olive oil are divided in 2 main categories:<\/p>\n<p>1.<strong> Organoleptic characteristics<\/strong>, determined by <strong>colour, smell, taste, thickness, clarity<\/strong>.<br \/>\n2. <strong>Physical and chemical characteristics<\/strong>, i.e. olive oil <strong>acidity<\/strong> and its <strong>content in various other substances<\/strong>.<\/p>\n<p>Three of the main evaluation criteria are the following:<\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element elementor-element-745c8b2 elementor-section-boxed elementor-section-height-default elementor-section-height-default\" data-id=\"745c8b2\" data-element_type=\"section\" data-e-type=\"section\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-default\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-33 elementor-top-column elementor-element elementor-element-5ea668f\" data-id=\"5ea668f\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-f2df65b elementor-widget elementor-widget-toggle\" data-id=\"f2df65b\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"toggle.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t<div class=\"elementor-toggle\">\n\t\t\t\t\t\t\t<div class=\"elementor-toggle-item\">\n\t\t\t\t\t<div id=\"elementor-tab-title-2541\" class=\"elementor-tab-title\" data-tab=\"1\" role=\"button\" aria-controls=\"elementor-tab-content-2541\" aria-expanded=\"false\">\n\t\t\t\t\t\t\t\t\t\t\t\t<span class=\"elementor-toggle-icon elementor-toggle-icon-left\" aria-hidden=\"true\">\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<span class=\"elementor-toggle-icon-closed\"><i class=\"fas fa-chevron-down\"><\/i><\/span>\n\t\t\t\t\t\t\t\t<span class=\"elementor-toggle-icon-opened\"><i class=\"elementor-toggle-icon-opened fas fa-chevron-up\"><\/i><\/span>\n\t\t\t\t\t\t\t\t\t\t\t\t\t<\/span>\n\t\t\t\t\t\t\t\t\t\t\t\t<a class=\"elementor-toggle-title\" tabindex=\"0\">Acidity<\/a>\n\t\t\t\t\t<\/div>\n\n\t\t\t\t\t<div id=\"elementor-tab-content-2541\" class=\"elementor-tab-content elementor-clearfix\" data-tab=\"1\" role=\"region\" aria-labelledby=\"elementor-tab-title-2541\"><p>The degree of olive oil acidity means its content in oleic acid.
